Split fava beans are versatile and easy to cook, with no soaking required. They are a great addition to stews and curries, and can also be used to make hummus, dal, or falafel. The longer they are cooked, the softer their texture becomes.

Cover the beans with water or stock, boil for 10 minutes, then simmer, braise or roast for 20-30 minutes. Pre-soaking can speed up cooking, but it isn’t essential.
