Carlin peas have a firm texture and nutty flavour, making them a suitable alternative to chickpeas or lentils. They are commonly used in soups, stews, curries, and salads, and are traditionally served as parched peas with vinegar and salt.
Soak your carlin peas overnight, then drain and add them to fresh water that has been bought to a boil. Simmer for 1-1.5 hours until soft.
